Delicious Blueberry Muffins

I already had several recipes for Blueberry muffins, but for some reason decided to look for another.  One of my favorite places to search for recipes is Allrecipes.com.  When I find a high rated recipe that I'm interested in, I always take the time to look through the reviews.  Often the best advice for making the recipe perfect can be found there.

This recipe is called,  Aunt Blanche's Blueberry Muffins.  Wherever Aunt Blanch may be, I'd love to thank her. There were a number of tips and variations in the reviews, but the change that most people recommended was the addition of vanilla extract.  I made these muffins for several holiday get-togethers and everyone loved them.  So without further ado (I have no idea why this phrase popped into my head), I present:

Aunt Blanche's Blueberry Muffins

1.    Preheat oven to 350 degrees.  Grease and flour muffin pan or use paper liners. 



2.    Sift flour, baking powder and salt together and set aside.
•    2 cups all-purpose flour ~ can substitute w/ some or all whole wheat flour
•    2 teaspoons baking powder
•    ½  teaspoon salt





3.    Cream butter and sugar until light and fluffy.
•    ½  cup butter  ~ can substitute ¼ of the butter w/ unsweetened applesauce
•    1 ¼  cups white sugar ~ can use less – I only used 1 cup and it was still nice and sweet



4.    Add eggs and beat well.
•    2 eggs
•    1 tsp vanilla

5.    Add milk and flour mixture. Beat until combined.
•    ½  cup milk ~ can substitute w/ some or all buttermilk or kefir



6.    Stir in blueberries.
•    1 ½  cups fresh blueberries (or cherries)  ~ if using frozen, allow to thaw -  I used frozen.


 
7.    Fill 18 regular sized muffin cups 2/3 full. Bake at 350 degrees F for 25 to 30 minutes.
 


The last step is crucial!  Put them on a pretty platter and eat at least one while still warm.  As with most muffin recipes, I put some in the freezer for another day.  Enjoy!
