Penny's Red Smoothie

My sweet friend, Penny, sent me the recipe for her favorite smoothie.  It has become my new favorite as well.  It's yummy AND healthy.  What more can you ask from a smoothie?


Penny's Red Smoothie


  • 1 med. (chopped) beet
  • 5 oz. of org. spinach, (about 2 handfuls)
  • 1 frozen banana
  • 2 - 3 cups frozen org. blueberries
  • a little Naked Juice or water

Makes 3 smoothies.

Mix all in a good blender - Vitamix or Blendtec.  If you have just a standard blender, it might not be able to handle the beet, but you could use the bottled beet juice instead.

My variation - I added a scoop of protein powder because my hubby (who has cancer) is supposed to be including that in his diet.
